Rice is an ingredient that drives children crazy. Due to its versatility, it is a dish that allows it to be prepared in different and varied ways. On this occasion, we suggest you make this delicious and rich paella, a spanish recipe which will lead children to leave nothing on the plate.
This Paella Take a little of everything, prawns, chicken and vegetables. Therefore, it is very complete. The secret is to use round rice and a good fish, chicken or vegetable broth, as you like.
- 2 cups of round rice
- 250 gr. shrimp
- 2 chicken quarters or thighs
- 1 onion
- 2 tomatoes and a red pepper
- 100 gr. peas (canned or frozen)
- Salt, parsley and olive oil
- A few strands of saffron
- 5 cups fish, chicken or vegetable broth
1- Put the oil in a pan and bring to the fire.
2- Add the chicken quarters or thighs in small pieces to sauté. Remove and reserve.
3- In the same oil, sauté the chopped onion and the seedless tomatoes. Pass everything through the food processor and reserve.
4- Peel the prawns. To make the broth, cook the shrimp shells and tails. Bring to a boil, strain and reserve.
5- Bring a paella pan to the fire, add oil and sauté the peppers in strips and then add the tomato and onion mixture. When hot, add the chicken and rice. Mix and stir until it takes color. Add the shrimp broth.
6- Add the chopped parsley, the peas and stir.
7- Add salt to taste and the saffron.
8- In total, you should add 5 to 6 cups of broth. Remember that you should always use twice the amount of broth as the rice that you have put in. For example, if you use 1 glass of rice you will have to put 2 glasses of broth, and so on.
9- The paella will be ready to be served when you notice that the rice is cooked and dries in the paella pan. It usually takes about 20 minutes.
